What is the difference between the Venture One and Venture cards?

Higher CL (venture) , AF (Venture) , more points per dollar (venture 2x vs venture one 1.25.

Honestly probably that same UW standards.. No Cap1 Cards are "hard" to get.. If there is any difference in UW, it would be small. I believe the Venture One can start out with less than a 5k CL and the Venture is a Visa Signature that starts out at >= 5k.

If you want one of these cards, go Venture for the better sign up bonus and rewards and PC it to something without an AF around the 1 year mark.
