I figured because Discover IT and Chase Freedom had cashback options, that I didn't need another card like that.. and because I didn't think I'd get approved of for it.

You're much better off with Chase, Discover, and Amex than you would have been with TD. Everyone has that one lender who for some reason doesn't like them. Mine is the Love Loft card. I have pretty much every prime cash back card out there, but I've app'ed for Loft twice and denied both times. There comes a time to stop fretting over the crappy cards.
Only wanted a TD Bank cause I have accounts with them (savings and checking).

How do I upgrade the card and will it cause a pull? If they said the date I'll get my card, will it take longer to get here?

It will be a Soft Pull so dont worry. The credit line increase three months later will also be a soft pull. You just call AMEX and give them your info, like I said before mine was converted to BCE just days after getting approved. I just called the number on my Delta Skymiles and said "Hi, I just received my Delta Skymiles, and have decided that another type of card would suit my usage better" She asked me which card I said "Blue Cash Everyday" and sh said Great choice! your card has been converted you will start earning your BCE points tomorrow. At that point my overall credit file was still crappy and that wasnt an issue.
That was it. The next day my account page was showing the BCE instead of the Delta. They sent a BCE and I just continued using my Delta card but for all intents and purposes it was a BCE.

+1 I agree that once you have AMEX and Discover no need to worry about TD Bank. I love the BofA CCs alot though. Their rewards structures are actually pretty decent and many don't come with annual fees
