What if my address is different from my mom's address when using herAmex forAU?
Couple of points here:
1) Amex does not have AUs. They have additonal cardmembers ( ACs ). ACs have their own account, are jointly liable with the original cardmember, and do not inherit any of the credit history of the account. Meaning that it will appear as a new account on your credit reports.
2) The address won't be an issue ~ many creditors match cards via the addresses on your CRs.
3) FICO08 scoring seems to disregard many AU accounts whereas earlier score models include them. However since this is an AC not an AU I'd speculate that FICO08 would include it, although we really don't know for certain if this would be the case.
Also I will move this to the credit cards forum for better visibility

I do have a secured card from cap one
Ok. You might want to visit the mortgage forum but I believe that the accts need to either be joint or be your own responsibility ie non AU, to count as the 3 TLs. However, SLs, car loans will count too
