Plenty do. I'm a member of 3 but I only have a product with 1 at the moment.
Don't just poll. Look at specific products and not just at the credit unions themselves.
I joined the 1 for a specific product. I joined the other 2 because I was eligible and wanted to join while eligible even though I did not need specific products from them.
I don't feel so bad for belonging to 2 now. Resource 1 CU and DCU. I plan to add PenFed as well. I think the real question should be, do you have the funds to spread between all of them?
I have a business account and personal account with Resource 1. I have $10 per paycheck going to DCU. I don't make enough expendable cash to support both. I use my business account for everything since my divorce but I am about to split my personal stuff off that account since I take credit cards now and the processor is linked in pretty good to my business bank account. I am going to split my personal stuff off and send it to DCU I think.

The answer is pretty similar to the same question about credit cards (newbies here and those not in these forums "Why do you need X credit cards!!!") People get them for special features of each and/or diversity so that if one "goes bad" you have others in place
Iv had the problem with one of my CU's not even trying to be competitive or offer me any products or services id be eligible for...as well as one heck of a fee hike..
The other has gone over and above to find products im eligible for and has worked with me, even with suggestions for improving credit score.....
Yes... some CUs forget about their members and take them for granted
Theres also what i call predatory CUs ... its a CU, it has loose member requirements but if you actually get an account there.. they are equal to or worse than some major banks on fees and such.....
