Sorry you got denied. That stinks! It sounds like you are very creditworthy.
First, call Cap One reconsideration/underwriting a few times to see if they can push it thru.
Second, escalate to the Executive Office (EO) via email or mail. They have more power and might be sympathic to your situation.
Third, apply for another non-Cap card if you want one (it'll help your Fico score in the long run, specifically number of accts and mix of credit).
