I would request that the refund be in form of a "gift card", or a check if possible from the airline.

It never hurts to try.
Meeting minimum spend with refundable airline tickets is a big no no. If you didn't know how to meet spend via other means you shouldn't have signed up for the card.
Barclays will charge back the points. So they will take back X amount back from the statement credit that you would not have been met with the 40k sign up bonus.
