Apply for a Marriott Premier or a Chase Sapphire Preferred. What in particular appeals to you about a Visa Signature? I assure you it spends the same.

Income has nothing to do with it aside the credit limit you will receive if approved. Someone making 10K will get a Visa Signature the same as someone making 10M assuming their approval is for a credit line $5,000 and up.

One person replied that his/her son received a Chase Visa Signature with a $25K income, although his CL was under $5K.
I believe the Venture is only issued as a Visa Signature.
Have you checked the Capital One prequal site for Venture or Venture One? I apped with scores lower than yours, even though I had no prequal. Was approved for Venture @ $15k and Venture 1 @ $7.5k. Both are Visa Signature cards, btw.
