I'm planning on entering the garden for a long time, but want one more, below is what I currently have:
Amazon Store Card - Amazon
Amex Blue Cash Preferred - Groceries/Gas
Capital One Quicksilver - Recurring online bills (Hulu, netflix, etc)
Chase Sapphire Reserve - Everything else
Discover It - Rotating Categories
USBank Cash+ - Phone/Uber
Penfed and Citi are out of the question (because I was denied )

Alliant CU's 3%/2.5% rewards card.
Looks like you would be good with what you have and start gardening now.
+ 1. If you do add another card I would add a Chase card to collect URs.

Perhaps the Chase Freedom? Rotating categories which can hopefully compliment your Discover IT card and have a different category each quarter.

WHY?
You have 6 cards now and need to stop applying since PF and Citi are telling you to do the same.
No more apps!!!!!
More CLI's every 6 months or so to grow your arsenal instead of tormenting yourself with denials. If I were going to push the envelope with more apps then I would target some lenders you don't have like BOA and never would have wasted a HP with Citi since they're always low when you open one. Both AMEX / Disco will grow considerably if you put away your app-etite and just nibble on CLIs instead. Give the CLI method a chance for 12-24 months and then think about shuffling things up to match where your spend is at that point.
