Because I rarely use my discover/capital one card but I use the heck out of my chase cards. Theres random rewards/miles on the discover and capital one card but not enough to really redeem.
With Discover you can redeem at $0.01 or more so if it was a card I didn't use much then I would redeem it any time I earned anything.
(I already kinda do this but sometimes I'll wait an extra month or so for redemption, but since Discover is my only rewards card at the moment it just depends on whether or not I want to cash out that month or not, heh).

Lets say you use an app like Wallaby or you're just really good at remembering your rewards, how do you use your rewards since they're spaced out on different cards? Do you just wait til one card is eligible to be redeemed or do you combine the rewards onto one card?

Both but I don't use Wallaby.
I have 3 UR cards and the UR points are consolildated on the CSP since it can transfer. UR points usually end up being transferred to my MileagePlus account which is also accumulating miles via the UMPE and a couple of other sources in addition to any actual air travel on United.
One of my cards automatically issues statment credits each month.
On other cards I redeem as often as possible except for the cash+ which still has one $25 bonus for redeeming $100+ left on it.
There isn't a one-size-fits-all approach. You have to determine what works best for you, your spend, situation, preferences etc. For some using multiple cards or spreading them over too many cards doesn't work for them to begin with. Some keep their rewards pooled and use as needed/desired. Some redeem ASAP out of need/want and/or fear of nerfing.

That's true for different creditors but not with a given creditor. Granted, it turns out that the OP wasn't asking about the latter but UR points can be combined from different cards. It's not really combining to one card but MR points accumulate in one MR account from all MR cards.
