Good question. DW and I share a checking account, so I haven't run into this, but you are correct that there is no way to add AU cards to your own profile as there is with Amex (and Citi, as well). I would call or send a SM (preferred since you would have it in writing if things went south) to inquire so that you don't run the risk of a bounced payment.
Also, you may want to add some width and height tags to your card images; that's a big United card.

Not sure about Chase but I have pulled payments from my spouse's separate checking account without any problems in the past. It has mainly been to pay Capital One so I don't actually know if it will work with Chase. Can you just Zelle the money from your wife's account to yours and then make the payment from your own account?
Hey OP! You need to fix your signature to shrink those annoyingly large card images.
In my experience I've had no issues with Bank of America, Amex, Chase, Citi, CapOne, Synchrony, Comenity, or Discover pulling payment from my personal checking account to pay for wife or my grandma's credit card bill. Neither of them are on my of my checking account and I'm not AU on any of my grandmother's cards and only a couple of my wife's cards. Never had an issue and have been paying some of my wife's cards and all of my grandma's for a few years now.
ETA: No issue with Barclays either as my wife has the Uber Visa and payment is pulled from my checking without issue.
