Color me behind... What Chip do I keep seeing talk about? You have to order it special? Is this like the touch and pay that Chase has sometimes?
The answer I got was that the EMV chips weren't available on personal cards at this time, only corporate cards.
I'm not sure if this is 100% accurate, but its all good. I'm not planning a trip right now that would make me need EMV.

I just called and got my cards replaced with cards with chips in them, but they said the chips don't work in Europe as EMV chips yet, just with vendors in the US that have that tap technology. EMV-capable chips will be available in the near future. Still I got all my cards replaced anyway so I can swipe my cards less.

EMV is a different thing. Amex offers an EMV chip on the Platinum card. But it is chip and signature, not chip and PIN so it is still of limited use in Europe. All that said, depending on where you are going, you don't really need an EMV chip except in limited situations. We had no problem using cards without chips in London and Paris. I don't think we would have been able to use an automatic kiosk for the subway, but that's about it.
I'm fairly sure that the Platinum is the only card that you can request an EMV version on the AMEX side.
I know that Platinum users can request a card with a chip at no additional cost.

My chip and signature Hilton Reserve card did come in handy in Zurich at the beginning of the month. It worked in the automatic kiosks for the tram system when my CSP wouldn't. On the other hand, there were multiple occasions when it did not work. The metro systems in Madrid and Barcelona wouldn't take it, even when I punched in the PIN assigned to the card.

The rep I talked to today said they were Beta Testing the Chip and Pin EMV on Corporate accounts at this time. They haven't rolled it out to the personal users yet, because they want to make sure that it works perfectly and is secure.
