I know that with my AMEX, I can set a spending limit per AU card. I would imagine Chase would have this option as well.
But I can answer your second question, yes, Chase will still report on the AU's CR without their SSN. Im authorized/reported on my grandmothers Slate card and was not asked my SSN.

I would love to add grand daughter as an AU just so she has something in case of an emergency but I would have to set a limit because lord help me if her Mom got hold of it....
Only Amex has this feature because the ACMs have a different account number. It would be impossible to set limits on cards like CSP since the primary and AUs share the same account number.

I have what maybe a stupid question but without a AU SSN how can they report to credit bureau? How would they know for sure without that info? I am also confused as to having the same account number for me and the AU if it is not AE. I PC from Cap 1 plat to QuickSilver recently and added a AU got new cards today and the account # for me and my AU are totally different. I will add I don't see a option to set a spending limit but account numbers are not even close to the same?

There's is a match criteria that CRAs will use. Same surname, address for example. However, its also possible that the information does not get matched which is why YMMV
