I spoke with Capital One and asked awhile back - they said if I needed it, to just call in and let them know it might take you an extra few weeks- they said it wouldn't be a problem.
When I first got my Amex Gold card years ago, I didn't have a steady income, and I was a few hundred shy of meeting the required spend. They said they would give me another month. So yes, it is possible - but YMMV.
