I don’t really think propel is comparable to CSP/Premeir due to it not being able to transfer to travel partners, thats where you are going to get the best value out of premier and CSP. To me its more comparable to maybe Barclays arrival + card where you are just redeeming travel credits ? Unless i am misunderstanding how propel works they aren’t really comparable.
If you are into flexible travel vacation date/destination, sure transfering points to a partner could yield high return for sure, all you need is to wait for right time and right sale.
If you are like me, who just need the reward point to cover necessary work or other family duty related travels with little flexibility on where and when the travel has to happen, CSP/premier is just another 2.5cpd value cards, which pales in comparison to the 4.5cpd from propel+visa sig.
then again, propel has next to nothing in the benefit department, lol

I think you may be misreading the benefit terms if you think delay protection takes less than 12 hours on Premier.
I've actually examined the travel insurance terms of Chase and Citi quite closely. If you want to start a fresh thread so we don't derail this one further, I could walk you through some of them.

Thank you. So you don't think the Amex Gold will be worth it, over a straight cashback card like the propel, even if I use all the credits? With credits used it's only a $30 AF, which I feel I would easily pass with the 4x dining and groceries, and the occasional flight. It's just maybe MR points aren't as valuable to me now as cash? I think if that's the case then I'll probably go with the propel over the uber.

While this is true, MR can be saved and used in the future. If you feel like travel is something you'll be doing in the future, it wouldn't be too hard to get value out of MR when the time comes. Honestly, given that OP travels a couple times a year, MR could still come in quite handy.

I know generally I shouldn't cancel cards, but if I get the Amex Gold for now due to the 50k SUB and the dining offer they have currently, and later decide the card isn't working out for me, can I open an Amex ED and cancel the Gold, to keep the points? Or will they not transfer over that way.

Just make sure you don't close the account before a year has passed. Doing so could put you on the Amex SUB blacklist. But yes, you can keep the points with an Amex ED. Or, you could also open a BBP and keep the points there. 2x/$ isn't bad up to 50K.
EDIT: Not sure how it double posted. This has happened a couple times to me now, where the page will give me an error and tell me to correct the highlighted errors before posting. Then, I'll look at the original thread and I'll see my post has actually posted...

If it happens again, simply use the 'Report Inappropriate Content' option to flag the dup and we'll take care of it. (Yes, I know it's not 'Inappropriate', but we use that for everything.)
