American Express says I have 0 even though I spent about $70 on Monday at a Chinese restaraunt and the charge is no longer pending. And how do points work on cashback cards? I have three cashback cards (IT, Quicksilverone and Freedom). Are they added on after a charge is done pending or? I'm enrolled in all of the programs for all these accounts.

Amex points are 1 month behind if I'm not mistaken.
Oh really?? Good to know! I was gonna say I just did spend a decent amount lol.
I believe QSO points are added shortly after the purchase, and Freedom's UR points are added at statement cutoff
They may or may not appear until the next statement cuts - Discover usually doesn't post points until new statement cuts. That said, if points accrued between statement dates, it will show under "points recently earned" or something to that effect - they should offically post on the next statement. Check your account profile, there may be options to be notified with alerts (i.e., via email) when your payment is due, when statement cuts, when points are earned, etc.

+1
Amex - next statement.
Barclays - within a few days of the purchase.

Just to be clear what next statement might mean: BC(X) is truly often a month behind, if your statement cuts on say the 28th, purchases done in the first part of Jan won't earn points until the Feb 28th statement (while appearing on the Jan statement). Annoying, since other companies do it as they post!

You are NOT mistaken. Except for bonus points, which are credited shortly after spend requirement is met.
