I was thinking the same thing. If they're just in it for the bonuses, perhaps closing some of the other unused accounts could take some of the potential risk away.

Absolutely! Even though your grandparents' file might be "thick" as you say, banks look at a variety of factors when making lending decisions. So it is definitely possible for them to be denied, as it is with anyone really.

Not really. They churn on schedules, and if they get declined for a card, that's fine. You either negotiate to close/reduce existing cards or wait a little with that bank. Just like normal people do.
If you are chasing bonuses, you DON'T need to get every one, just enough.
