I've been using Discover It for Amazon and department stores this quarter to take advantage of their double cash offer, but I don't spend that much in either of those categories so it hasn't been used as much as the main three.

It's never efective to just randomly throw solutions at a problem and to try to see which ones work. Polling others on which 2-3 cards they use is just asking for random solutions.
For someone who is writing a post about not making assumptions, you seem to be making a heck of a lot of assumptions about someone who is just asking a very simple yes or no question.
Discover It (DC) every day, Amex in Costco, CapOne QS - the rest.
I only had 2 cards when I found this site and now I have 5. I only rotate between 3 every month. Freedom, CSP and Amex. That works just fine for me. I don't need a ton of cards to live just fine. I also grow my rewads at a much more consistent pace with my spend concentrated on just a couple of cards. I may add one more card for general spend. I'm thinking maybe Citi DC or Cap1 QS. I agree with Takeshi74 that the average consumer only has a few cards. My wife who has excellent credit only uses 1-2 cards and doesn't want anymore cards. This site does not represent most people by any means.
I use 3 cards 99% of the time.
Discover of course, followed by CSP and Freedom. Funny thing is, when I was trying to meet spend on my CSP and Freedom I missed my discover and that was before the 2 % cashback offer. I like these 3 cards so much it's making gardinging a lot easier.
I'm actually quite boring compared to most folks on here...
I use Sam's Club MasterCard for Gas/Restaurants/Travel
I use BCP for Kroger and Publix (and the (very) occasional 'Amex Offer')
I use Discover for everything else, until July 2016 (when my 'double cash' is over)
I use Quicksilver when Discover isn't accepted, which is very seldom (pretty much just where I get haircuts, and one restaurant I go to)
I know that's four, but once the Discover 'double cash' promo is over, it will likely be reserved for the quarterly categories, "Discover Deals", and APR promotions, and the Quicksilver will take it's place as the 'catch-all'.
I've actually been surprised how much use I've been putting on the Sam's Club MC... I got it primarily for off-brand hotels, and the restaurant cash back was actually just a 'bonus', but fast-food purchases have ended up being a significant number of 'swipes' each month. That card is greatly undervalued, IMO.
My short list:
Barclays Arrival+ - default card
AMEX BCP - groceries, gas and Costco
Discover It - 5% categories only
Target - Target only
Mostly I use my AMEX Blue Everyday - almost daily and my Discover.
I use my CapOne QS for purchases that don't take Discover or Amex.
The other two cards in my wallet will probably slowly disappear as my CL's increase and only get minimal usage. My daughter uses my Chase Card and I'll combine my two CapOne cards eventually.
