Can a incorrect account open date be disputed and removed?

Yes this is a bank account (checking/savings) that went into negative balance because of overdrafts and fees

Because you are joint, there does not appear to be an error, except that it shows paid when there is a balance. So a dispute would not offer any positive benefit.

If she pays it off, its going to still be on your credit report. You may try the goodwill saturation technique, and maybe have some luck there; otherwise, you may be stuck with it for a while.
