Nope! If you get your reports from annualcreditreport.com, credit.com, myfico.com, etc... you are seeing all the tradeline data that the lender will see.
And the services that provide actual mortgage scores (myfico.com, credit.com, experian.com) show you exactly the same scores the lender will see (assuming no report changes between the time you pull the report/score, and the time the lender does, of course...)

Nope. While it's true that legally speaking, a "full factual" report is allowed for loans over a certain amount... it just doesn't happen in practice. Don't worry even a little bit about that... if you can't see it on your reports anymore, neither can the lender.
Yes, there are smaller CRAs beyond the "big three" that can continue to report bogus data, but in practice that would only be used to find major unreported debts, liens, etc... and wouldn't affect your mortgage scores regardless.

Go for it, there's no risk. But maybe also consider switching to a better-informed lender...
@iv thank you, even if I don't get a letter from my dentist I will go ahead and ask for another credit check then and hopefully end up with a lower rate!
Update: after badgering my dentist's office for a week, they did end up writing a letter for me. My lender submitted it and got a rapid rescore, and my credit score was 100 points higher (as I thought it would be). Still not sure that that letter was necessary, but it was a happy resolution anyway. Thanks for all the advice!
