So maintaining a $1 balance across all cards would be good since it’ll be 3% or just alternate 1% across cards? So keep 1% in amex for a month, then 1% in discover the next, etc...

Alternating would be better as there is a ding for "too many cards with balances"

Also you get a bump for AZEO; all zero except one.

Make sure you don't confuse $1 with 1%.  A balance of $1 is considered too small by many CCCs and will actually be "forgiven" at statement close and reported as $0.  Some lenders forgive balances even slightly higher than that (say) $2-$4, so the common recommendation on this forum is to go with $5 as your minimum balance if you want to ensure it gets reported.
