Hi Ross, welcome to the forum.

Without sounding silly, the scores are updated when someone/you pull your credit report and the scores. Here's how it works:

Throughout the month, a CRA accumulates the activity on your various trade lines; cc's, mortgages, auto loans, etc. I call it a que. Data lays in your cue for a period of time.

You creditor reports to the CRA the activity they had on you for the month.

No actual scores are generated until a report is pulled, and the data is fed through the CRA's scoring model.

Sooooooo, if you pull your credit reports daily, then they are updated daily, as well.
Pull them weekly, then they are updated only weekly.

I hope that makes sense. That's how I understand the system.

The underlying information that determines your score can be updated at any time.  Credit card companies each report at different times - so it can be really helpful to know when your CC companies report - that way you can make sure you make your payment in time for the payment to be reflected in your report. 
 
As Syliva mentioned, the score doesn't really exist until someone pulls your credit report.  Then, based on information that's been provided to the reporting agency, a score is calculated based on that information.  So if you pull your reports two days in a row, it may not change... or it could change dramatically if things have been reported to the agency in between your two pulls.
