To be honest, I'm kinda suprised you got approved for anything, several new accounts, tons of inquiries, and a recent collection, not the best plan when looking for more credit. You need to take a break and cool down for a bit or you are going to start getting hit was CLD.
How many of those inquiries are less than a year old?
Also what's your AAoA and ~Income?
As for Amex, being an AU will help, but so will your Gold card. Just run lots of money through them, and PIF each month. However, I would not try and apply for an Amex for at least 6 months, probably a year. You need to cut those Inq down in half. And honestly if that collection is actually showing on your report, you are going to have a very hard time getting an Amex for several years.
+1 Congrats on the approvals but with all those inqs, new accts., and fresh collection (did you try for PFD?) the timing was not that great for any app really, as the denial to app ratio seems to confirm...ideally put more time between the collection if you can't dispense of it altogether and keep that trigger finger away from the app button for a while
The Gold and Amex AU acct can be a good lead in to a Blue down the road if treated well.

Treat it well, watch it grow and join PSECU and NFCU (if eligible) too when ready.

And you could too, if you stop applying for new credit for a couple years and let your credit reports cool off a bit!

From what I've read, you can backdate an Amex even if you already have one when you are added as an AU. I would not advise the OP to try and have this done now even if his GF card is older simply because if I were him, I wouldn't want to draw any extra attention to my accounts, especially with Amex.
As for it not helping your credit, being an AU on any card will help your credit if it's older and has a higher limit than your cards.
And has no negatives, like late payments, etc
OP, I got a CU cc with a 5k limit recently, so it's not everyone.
OP - credit repair is often less like a sprint and more like a marathon and it seems you're off to a good start with a forgiving CU, etc.
expecting the same outcomes as others with very different credentials, while tempting, generally offers little, if any, added value to your progress.
