This is a common side-effect of disputing. As you know now, avoid disputing, especially an open account. You could probably write them (CapOne) and tell them what you happened and they'll likely put it back on your CRs.
I can't speak to CapOne, but I have an HSBC account that is the same. Seems like whenever I pay the balance to $0 prior to their end-of-the-month reporting date, they take their sweet time, sometimes up to 60-90 days to update. And when they do up, they seem to update on the day my balance is at its highest.
