Just some bean and veggie soup tonight...but at least I don't have to soak the beans first or watch them closely. ![]()

This quarter's category is restaurants.

What happened? Did they scorch? Did you have them on pressure or sauté?
I can’t remember if you got the 3q or 6q....but I bought this IP cookbook for the 3q https://www.amazon.com/gp/product/1454931922/ref=oh_aui_detailpage_o02_s00?ie=UTF8&psc=1.

Discover Deals gives +5% (10% if during first year) for Walmart.com. I assume the item is eligible for in-store pickup or free shipping at that price.

Sometimes it is the best in terms of raw rewards. For Walmart, I think it's the best by some margin.
I don't use Discover Deals as much as airline portals. Those let me use a Citi or Amex card.
Does anyone knows where I could shop for baby back ribs? Friday and Saturday, I went to pretty much all my grocery stores nearby and no one had any. Costco only had spare ribs, Publix doesn’t have anything and WholeFoods had baby back ribs but super overpriced. Kroger had them but it sold out before I got there. Is there a store I’m missing?
I had to drive to the next town but I found baby back ribs and made them with potato salad and corn on the cob. They turned out amazing and the ribs falling off the bone. 😋 Recipe below!
Maple Tamarind Baby Back Pork Ribs • Yields 3 servings
1 teaspoon sea salt, plus additional for serving
1 teaspoon garlic powder
1 teaspoon dried thyme
1 rack baby back pork ribs
¼ cup bone broth or water
2 tablespoons maple syrup
1 tablespoon tamarind paste
1. Mix together the salt, garlic powder, and thyme and rub on both sides of the rack of ribs to season.
2. Slice the rack of ribs into three equal-sized portions and lay them in the bottom
of the Instant Pot®. Pour the broth/water around (not on top) of the ribs.
3. Close and lock the lid. Press MANUAL for high pressure. Set cooking time to
50 minutes. Once time is up, allow the pressure to release naturally.
4. Whisk together the maple and tamarind in a small bowl until combined.
Heat oven broiler on low. Arrange the top oven rack 6 to 8 inches away from the broiler element.
5. Place the cooked ribs on a rimmed baking sheet with the meaty side up. Baste
with half of the maple-tamarind sauce. Broil for 5 to 7 minutes until bubbling
and caramelized, remove from oven, and baste with additional maple-tamarind
sauce. Broil for another 3 to 5 minutes until caramelized. Season with additional salt and serve immediately.

They cooked around 50 min. I had leftovers tonight and they were still super good.
