I am filling in an application that is asking why I am no longer working for a company I was let go from. They are asking for the specific reason. Issue is I was let go for the owner to hire his girlfriend for extras while his wife stayed home with their kids and I did not agree with what he was doing so I was axed and she got my job. How do I explain this without coming across badly? It had nothing actually to do with my job performance which he complimented up to the week of my being booted.
Maybe leave it at: "There was a conflict in ethics in the workplace and I was let go for upholding what I felt was right". If they ask for details then say what you said here. Maybe to simplify it say that there was "unfaithfulness among my employer's marriage in the workplace" and that "the conduct by the employer created an unprofessional environment that I did not want to take part in".

Tough spot to be in.
Maybe approach it that the company had a limited budget and had to do a reduction of staff. Really that's what happened since they only wanted one person in the job, not two. Keeps you out of the ethics mess also.
Is the former employer willing to give you a good reference, based on your understanding it was a budget decision? It's in the interest of the former company to get people off the unemployment rolls, as it keeps their unemployment insurance rates down.
